The soft serve accelerator program is currently only available with the GelMatic range of soft serve machines. This is for a number of reasons:
The first thing to consider is that the soft serve mix you put into your machine hopper, is a liquid, typically measured in Liters, Ounces, or Gallons...
...But the finished product that comes out of the machine is a solid, typically measured in Ounces or Grams.
Depending on whether your soft serve machine is gravity-fed or pump-fed, determines how much you'll be able to adjust the overrun.
Generally speaking, gravity-fed machines, won't have much control on adjusting the overrun and is typically around 50%. With a pressurized pump-fed machine, you have more control over adjusting overrun and can even set the machine to over 100% overrun.
Use this formula to calculate yield in a soft serve machine:
Let's suppose we're making a bag of Frostline soft serve, the default recommended mix for the accelerator program, known for it's profitability.
A 2.7kg bag of Frostline mixes with 7.5L of water, for roughly 10L of Frostline soft serve mix solution.
Following the above example, we'll still use one bag of frostline, and the same serving size of 100 grams. The only variable changing in this example is the overrun.
We weren't really sure what else to call this, but this is an important factor to consider that makes these calculations a bit less practical in real life.
We're going to continue using Frostline soft serve in our calculations because it's known for it's profitability and is our default recommended option for this program.
By now, you should understand that calculating yield from a soft serve machine is a bit tricky because of all the variables.

Keep in mind, that a sundae in Costco's standards, is just drizzling a bit of chocolate or caramel syrup on top of the soft serve. They are charging 20% more for just a bit of syrup! Keep upsells in mind when creating your menu...
