calculating yield

Do you really get enough free soft serve mix to fully cover the cost of your machine? The answer is yes... Let's run the numbers...

Calculating the yield in a soft serve machine can be a bit tricky... Why? Because there are a lot of variables. But, we'll do our best to make it as simple as possible to understand.

The first thing to consider is that the soft serve mix you put into your machine hopper, is a liquid, typically measured in Liters, Ounces, or Gallons...   

...But the finished product that comes out of the machine is a solid, typically measured in Ounces or Grams. 

Now, before we do any math, it's important to understand the next part of the equation... Overrun. 

Overrun refers to the amount of air folded into the mix during the freezing process. This is what gives soft serve it's light, fluffy, & irresistible texture. 

Depending on whether your soft serve machine is gravity-fed or pump-fed, determines how much you'll be able to adjust the overrun. 

Generally speaking, gravity-fed machines, won't have much control on adjusting the overrun and is typically around 50%. With a pressurized pump-fed machine, you have more control over adjusting overrun and can even set the machine to over 100% overrun.

Time for some math...

Use this formula to calculate yield in a soft serve machine:

  • Determine the amount of mix used: the amount of soft serve mix you put in your machine.
  • Determine the amount of soft serve produced: the amount of finished product your machine produces.
  • Calculate the yield: divide the amount of soft serve produced by the amount of mix used, then multiply the result by 100 to express the answer as a percentage.

Example 1: 50% Overrun

Let's suppose we're making a bag of Frostline soft serve, the default recommended mix for the accelerator program, known for it's profitability

A 2.7kg bag of Frostline mixes with 7.5L of water, for roughly 10L of Frostline soft serve mix solution. 

If you have 10 liters of soft serve mix and you want to calculate how many cones it will produce, you first need to calculate the total weight of soft serve that will be produced... Here's how:

Example 2: 110% Overrun

Following the above example, we'll still use one bag of frostline, and the same serving size of 100 grams. The only variable changing in this example is the overrun. 

You can see that the more overrun your machine is set for (110% in this example) allows us to get more out of our mix. You are literally charging for air, and can get more servings and thus profits from a higher overrun machine.

THE 'X' FACTOR

We weren't really sure what else to call this, but this is an important factor to consider that makes these calculations a bit less practical in real life.

This is because most operators actually measure a serving of soft serve based on VOLUME, not WEIGHT. 

And not to mention, the amount of overrun in the mix, will cause the weight and volume of the soft serve to vary.

Simply put: Depending on the amount of overrun your soft serve machine is set up for, a cup or cone of prepared soft serve may weigh more or less than 100g and will affect the number of servings.

how to fully pay off your soft serve machine

...it's like getting your soft serve machine for free!

We're going to continue using Frostline soft serve in our calculations because it's known for it's profitability and is our default recommended option for this program. 

Our soft serve accelerator program offers everything you need to be profitable with soft serve ice cream from day one. 

By now, you should understand that calculating yield from a soft serve machine is a bit tricky because of all the variables. 

To properly calculate how you get enough free mix to fully pay off your machine, we need to know two things:
1) how many servings are there per case, and
2) our price per serving

In our testing, we've found that a bag of frostline mix, can produce anywhere from 90 to 200 servings based on the overrun. 

We reasoned that a gravity-fed machine with 50% overrun, will yield you 113 servings (100 gram serving size) from one bag of frostline soft serve.

Each case of frostline has 6 bags... Therefore, one case will yield you: 113 servings x 6 bags = 678 servings per case.

The next step of the equation, is determining the price per cone or cup (or serving) of soft serve that you're charging...

We recently took a trip to Costco and saw that they are charging $2.89 for a cone and $0.60 more for a sundae ($3.49 for a sundae). 

Keep in mind, that a sundae in Costco's standards, is just drizzling a bit of chocolate or caramel syrup on top of the soft serve. They are charging 20% more for just a bit of syrup! Keep upsells in mind when creating your menu...

Remember, most businesses can't compete in price with Costco...

So, we reasoned that, $2.99 would be a good starting price point for a serving of soft serve, only charging a dime more than Costco. However, you could easily charge $3.49, $3.99, or even more for a cup or cone. 

Since a case yields you 678 servings... And since you’re getting the product for free, each case will generate…

So, at a $2.99 price point, each case of Frostline soft serve will generate $2027.22 profit once sold. And you will get enough free cases to fully cover the cost of your machine, once sold!

But, don't forget: even with a single flavour machine, you can sell a lot more than just cups or cones.

Rake in even more profits by creating specialty ice cream products! Sundaes... blizzards... milkshakes... affogato... ice cream sandwiches... and more!

Yes, soft serve machines are a pricey investment... but, remember: your soft serve machine is a cashflow producing asset. 

Over time, the cost of your machine will cover itself... It's just a matter of when...

And we find that most operators are able to fully pay off their investment cost within a year!*
